Pumpkin Chocolate Chip Squares

Pumpkin chocolate chip squares are a perfect dessert to get you in the mood for fall. Most of the ingredients you probably already have on hand. These are delicious. Enjoy!

Pumpkin Chocolate Chip Squares
2 cups flour
1 T. pumpkin-pie spice OR 2 tsp. cinnamon, 1/2 tsp. ginger and 1/2 tsp. nutmeg
1 tsp. baking soda
3/4 tsp. salt
1 cup (2 sticks) butter, room temperature
1 1/4 cups sugar
1 large egg
2 tsp. vanilla
1 cup canned pumpkin puree
2 cups (12 oz.) chocolate chips

Preheat oven to 350 degrees. Grease or spray 9″ X 13″ baking pan.

In a medium bowl, whisk together flour, pie spice, baking soda, and salt.

With an electric mixer, cream butter and sugar on medium-high sped until smooth; beat in egg and vanilla until combined. Beat in pumpkin puree. Reduce speed to low, and mix in dry ingredients until combined. Fold in chocolate chips.

Spread batter evenly in prepared pan. Bake until edges begin to pull away from sides of pan and toothpick inserted in center comes out just a few moist crumbs attached, about 40 minutes or so.

Monster Cookies

Monster Cookies
1 1/4 cups peanut butter                    3 eggs
1 cup brown sugar                                1 cup sugar
2 tsp. baking soda                                 1 stick butter
1 tsp. vanilla                                            8 oz. mini M&Ms
8 oz. semi-sweet chocolate chips    4 1/2 cups quick rolled oats
Preheat oven to 350 degrees. Mix ingredients together in order given. Measure dough with ice-cream scoop. Bake on ungreased cookie sheet for about 12 minutes. ENJOY!!!

Chocolate Chip Cookie Dough Brownies

These are some delicious brownies. (Thanks to Betty Crocker) Give them a try!

One Betty Crocker Brownie Mix and one Betty Crocker Chocolate Chip Cookie mix. IMG_1429_edited-1 Follow the directions on the box for making the brownies and pour into a greased 13 X 9 pan.IMG_1389_edited-1Make the cookie mix as directed on the pouch and drop by rounded tablespoons into the brownie batter. Press the dough down lightly into the brownie batter.
IMG_1402_edited-1 Bake for 35-40 minutes in a 350 degree preheated oven. When they’re done, take them out and let them cool completely before frosting them.IMG_1421_edited-1 Then, you can frost them with chocolate frosting or for an even better version, do what I did. Whip up some chocolate ganache. Pour it on top and spread it out evenly.

Chocolate Ganache
12 oz. semi-sweet chocolate morsels
3/4 cup heavy whipping cream
6 Tbsp butter

  • In a small saucepan, heat cream and butter until just before the boiling stage.
  • Pour over the chocolate morsels.
  • Let stand about 20 seconds and stir until smooth.
  • Pour over brownies and let set before cutting. Once the chocolate ganache has set up, then cut the brownies and enjoy.
